Jowl is similar in composition to bacon—it has tender meat layered between white strips of fat that cook up nice and crispy on a skillet. But jowl is not as uniform as bacon. It has larger and fewer layers of fat and meat, unlike pork belly, which has thinner more numerous individual layers.
Our new farm label represents meat sourced solely from our forest raised pigs raised on our 44 acre farm. Pigs are woodland creatures, so raising them in our forested sections allows them to enjoy their preferred under story habitat. We rotationally graze the pigs through the woodland which allows enrichment while they forage. While rooting through the woodland, they are free to eat all types of roots, seeds, leaf litter, grubs, and insects, which help supplement their local grain that we feed out. After the pigs move through the woodland, the area is rested from the intentional disturbance, and the soils use their seed bank to grow a fresh population of under story species, with more sunshine now able to reach the soil surface.
