Fatback is the fat from the back of a pig. It is a "hard fat" that can be chopped and ground. As such, fatback is a key ingredient in many sausages to add flavor and juiciness. Fatback should not be confused or substituted for lard in a recipe as lard is pork fat that has been rendered—or melted and strained—before being allowed to cool and solidify again. The rendering process makes lard smooth and scoopable, with a texture more like butter, while fatback is more solid like meat.

Sourced from our pasture raised pork. Our pigs have free access to the outdoors, our barn and water. They root and burrow, and we grow them slowly to enhance their welfare, and the quality of their meat. They eat a diet consisting of local vegetables and grains.
