This tasty cut is sometimes called “butcher steak” or “bistro steak”. This cut comes from the plate of a cow. The plate is the region just behind the forelegs. The hanging tender is delicious on the grill and is a popular ingredient in Mexican themed dishes. It can become a little tough if cooked at a slow rate but is ideal for fast, high-heat dishes like fajitas, or a quick broil. It also lends itself well to marinades.
Sourced from our pasture raised cattle and other local New England farms. Our cattle have free access to our fields, barn and water. They freely roam, and we grow them slowly to enhance their welfare, and the quality of their meat. Crescent Ridge feeds our cattle a grass-centered diet, supplemented with locally milled grains, and never uses antibiotics or pesticides.
