This wild-caught bluefin tuna is landed in Massachusetts. Bluefin is the largest of our local tuna species, and the fattiest. U.S. wild-caught western Atlantic bluefin tuna is a smart seafood choice because it is sustainably managed under a conservation and management plan that allows limited harvest by U.S. fishermen.
Known as akami, the loin is the leanest cut off the tuna and deep red in color. This is the most commonly found piece of bluefin sushi. Poke cubes are carefully cut from the prime loin meat of the tuna.
