Whole Tenderloin is a traditional, celebratory cut of beef. Cut from the loin it's the leanest cut and therefore the most prized. Each cut is approximately 7 lbs., give or take a few ounces. Our meats are sold frozen to preserve freshness.
Our cattle are pasture raised and have free access to our fields, barn and water. They freely roam, and we grow them slowly to enhance their welfare and the quality of their meat. We feed our cattle a grass-centered diet, supplemented with locally milled grains, and never use antibiotics or pesticides.
